QUICK LEMON GARLIC CHICKEN
When you come home from work tired and hungry and you need something
yummy to cook in a hurry, this is it!
- 1/4 cup olive oil
- 2 tablespoon lemon juice
- 3 cloves garlic, crushed
- 1/2 teaspoons coarse black papper
- 1-1/4 pounds chicken fillets, cut into bite sized pieces
- In a small bowl, combine oil, lemon juice, garlic
and pepper. Add chicken and toss to coat; marinate at least 15 minutes.
- Grill or sauté chicken for 12-15 minutes, or broil for about 5
minutes, turning often. If you grill or broil chicken, baste with the
marinade; if you sauté chicken, add marinade to skillet.
Yield: serves 4-6 people.
