BLUEBERRY MUFFINS
INGREDIENTS
- 1/2 Cup(100g) butter
- 1/2 Cup (80g) sugar
- 2 eggs
- 1/4 Cup(50cc) milk
- 2 Cup(230g) all-purpose flour
- 1 tbs. baking powder
- 1 Cup fresh blueberries or 1 canned blueberries
METHOD
- Preheat oven to 400F (200C).
- Cream butter and sugar until fluffy.
- Add eggs. Beat well.
- Stir in milk.
- Stir in flour mixture.
- Stir in blueberries.
- Fill muffin cups 2/3 full.
- Bake about 20 minutes or until slightly browned.
(Yield: 12 muffins)
