International Activities

 

 

Bob and I love to travel and have at many times combined both pleasure and professional activites, covering 48 states and 30 countries on four continents of the world. I was Professore Titulare at the Instituto Nacional de Salud Publica in Mexico in 1992. The picture shows me with some faculty members.
At four different times since the 1970's, I returned to the Philippines as Balik (returning) Scientist or as Fellow under the TOKTEN (Transfer of Knowledge through Expatriate Nationals) program. Early in 1996, I served as consultant at the Food and Nutrition Research Institute and Visiting Professor at the University of the Philippines College of Home Economics. I team taught a course on Diet Therapy to 12 senior students, 10 of whom were pre-med majors. After teaching classes of more than a hundred students at the University of Michigan, teaching a dozen delightful and smart students was a real treat. I even learned how to teach in Taglish (a mixture of English and Tagalog). Below are two pictures of my students, in a glamour pose and during a farewell party for us.

Bob and I presented two seminars on Cybernutrition 101 and Computers as a Household Resource. Bob also consulted with faculty in two departments related to their Costume Museum and their Collection of Indigenous Household Equipment Related to Food. Both departments are now prepared to document donated artifacts with custom-made forms as they are received. We had a lovely stay at the Balay Kalinaw (House of Peace) right on the UP campus. We availed ourselves of campus programs such as ballroom dancing,Tai Chi classes, and film and musical presentations. I had a ball eating all the ethnic foods that I had long missed while Bob describes his relationship to Philippine cuisine as one of subsistence. He was happy when we found a

McDonalds for occasional hamburger or their version of Teriyaki (ground beef patties with sauce) on rice. The XIIth International Congress of Dietetics was held during the time we were in the Philippines. I had the opportunity to welcome attendees, as charter member and former president of the Nutritionist-Dietitians' Association of the Philippines.

We also had time for a fun reunion with fellow alumni from the University of Iowa.
