Americans rely on packaged, prepared foods. Given the hectic lifestyle we have created for ourselves, this is not surprising. Especially in the era of the two-income family, making meals from scratch, let alone such things as condiments and stocks, is almost an impossibility. This is a shame, for there is nothing quite like the satisfaction gained from cooking with complex pantry items which you have prepared yourself. If I had the time, my pantry would be bursting with prepared foods all the time. As it is, I must satisfy myself with the occaisional almost guilty binge of food preparation, usually a response to all of the accumulated frustrations of the week. Perhaps the best part of making up apantry items is that there is no hurry about it. These things are going to hang around for a while. There isn't that somewhat directed feeling of preparing a multi-course dinner for friends, or getting anything on the table in time for soccer practice. What follows are recipes for things meant to be stored away for later use.
