one to my freshman roommate, Mitch Klein.
Ingredients
- 1 package Mac n' Cheese (preferably Kraft)
- a couple handfuls of frozen peas
- 1 can tuna in water, drained
- milk and butter/margarine for the mac n' cheese
Directions
Boil the water and put in the macaroni. Thaw peas in lukewarm water. When
macaroni is about halfway done (4 minutes), add in peas. Return to boil
for a minute or two. Remove from stove, drain, return to pot. Add
cheese mix, milk, and margarine as per directions on box.(Note: you
don't need the whole 3T of butter for it to taste good) Add the can
of tuna, mix, and enjoy! For added deluxe flavor, top off with a bit of
Frank's Original (Durkee brand) Hot Sauce. You won't be disappointed.

Ingredients
- 1 package Mac n' Cheese (preferably Kraft)
- 2 hot dogs, any variety
- milk and butter/margarine for the mac n' cheese
Directions
Put macaroni on to boil. Slice hot dogs into a bunch of disks. After
macaroni has boiled about 4 minutes, add hot dogs. Boil until hot dogs
and macaroni seem cooked, about 3 more minutes. Prepare as per box
directions, again skimping on the butter. Top with ketchup (Heinz, of
course) if desired.

Ingredients

- 1/2 pound ground beef
- 1 cup of salsa, any variety you like (Old El Paso can suffice)
- milk and butter/margarine for the mac n' cheese
Directions
Set macaroni to boil. Meanwhile, brown ground beef and drain. Pad the
meat with paper towel to extract extra grease. When the macaroni has
finished cooking (about 7 minutes), drain and prepare as per the
directions on the box, again skimping on the butter. Add in the ground beef
and salsa, stir, and enjoy!

Ingredients
- bunch of spaghetti, pending on appetite. At least as much as a
quarter's circumference.
- spaghetti sauce. Five Brothers is my new favorite.
- 4 slices bread, preferably Wonder or some cheap alternative white bread.
Directions
Boil spaghetti until al dente, drain, return to pot, add sauce,
heat through. Arrange in piles on 2 slices of bread, top with other slices
of bread. Mangia!

You can vary this recipe numerous ways, but the flavors come out
nicely with the recipe presented here.
Ingredients
- 1 pound ground turkey, preferably skinless
- 1 can vegetarian (no lard, low fat) refried beans
- chili powder
- tortillas (for fat free convenience, try Buena Vida tortillas)
- salsa (Old El Paso), taco sauce (Ortega), and/or sour cream (Land O'
Lakes light) to garnish
Directions
Brown ground turkey in a pan over medium high heat, sprinkling fairly
liberally with chili powder. Drain frequently. When turkey is finished
cooking, reduce heat to medium low and add refried beans. Stir and heat
through. Heat tortilla in microwave for 10 seconds, or hold over pan for
a bit. Put some of the mixture in the tortilla, and garnish as you
desire (I prefer sour cream and taco sauce). Eat up! And try not to
finish the whole batch, as I usually do.

Many recipes dictate marinating the meat for a long time. This one
avoids that grueling marinating step and yet produces a nice dish.

note on prices: I buy almost all my skinless boneless chicken breasts on
sale for $1.99 a pound, and I stock up my freezer. Colored sweet peppers
can be exorbitantly priced; don't pay over $2.99 a pound for any pepper.
It's not worth it.
Ingredients
- 1 pound or so skinless boneless chicken breasts
- 1 each green pepper, red pepper, yellow pepper (or any colors you like)
- 1 medium onion
- tortillas (Buena Vida aren't bad, and are fat free)
- chili powder
- taco sauce (Ortega), light sour cream (Land O' Lakes), and/or
shredded cheddar cheese, to garnish
Directions
Trim extra fat off the chicken breasts, and slice into bite-size
pieces. Place in a skillet, sprinkle liberally with chili powder, and
cook over medium-high heat. While the chicken
is cooking, chop the vegetables into small pieces. Just when the chicken
is no longer pink, reduce heat to medium low, add the vegetables and a
tablespoon or so of water, and cover. Cook about 3 minutes, until onions
turn clearish and peppers are tender. Serve in a warm tortilla, topped
with whatever you like (I prefer cheese and taco sauce). Deee-lish!

This one's from my Mom and my Grandma, both of them wonderful cooks.
Turns out my Dad hates this dish; that may explain the divorce. Anyway,
it sounds a little gross, but you'll enjoy the different textures and
temperatures of the food layers.
Ingredients
- 4 or 5 strips of bacon
- 2 or 3 big handfuls of egg noodles, wide or broad width
- a tub of cottage cheese, you choose the fat content
- salt and pepper
Directions
Cut bacon into small pieces, and fry. Boil noodles according to package
directions. When bacon is fairly crispy, remove from heat. Use slotted
spoon to transfer bacon to a paper-towel lined plate. Keep the bacon fat
in the pan. When noodles are done, drain. Dump noodles in a bowl. Pour
a little bit of bacon fat over the noodles, add salt and pepper to taste,
and toss. Top noodles with a layer of cottage cheese, and sprinkle bacon
on top of cottage cheese.

This recipe comes from loyal reader Jim, whose mother invented the
following. I haven't tried it yet, but it sounds both simple and good.
Especially if you like undiluted Campbell's sodium!
Ingredients
- 1 Can Tomato soup (Campbell's)
- 1 TBSP Worcestershire or steak sauce
- 1 tsp creole seasoning
- 10 dashes of Tabasco or Frank's Red Hot
- 1/4 cup shredded cheese (monterrey jack or taco mix)
- 2 slices of white bread or french bread
Directions
Heat soup in medium sauce pan until hot (Do not add water or
milk).
Add Worcestershire, creole, and Tabasco seasoning, stir together.
Toast bread. Add cheese to soup, stir until cheese is melted. Pour
over
toasted bread. Mmmmmm Good.
